Soft brioche burger buns – tasty milk buns (classic or vegan)

Ingredients

  • 20 g flour
  • 100 g milk or plant-based milk

Main dough

  • 170 g milk or plant-based milk
  • 14 g yeast
  • 40 g sugar
  • 450 g flour
  • 45 g butter or vegan butter
  • 1 egg or vegan egg substitute according to package instructions
  • 8 g salt
  • Cooking piece

  • 1 egg

Cooking piece

  • To make the cooked piece, mix the flour and milk in a pan until lump-free. Then heat on a medium heat until a pudding-like consistency is achieved. Put the pan with the cooked mixture to one side to cool.

Main dough

  • Mix the milk, yeast and sugar in a large bowl. Then add the flour, butter, egg, salt and the cooking chunk. Knead the dough with a food processor or by hand for approx. 10 minutes until it has become soft and smooth. If the dough is still a little sticky, add a little flour and knead in briefly.
  • After kneading, the dough is rounded, i.e. to create surface tension, the edges of the dough are folded towards the centre. Now place the dough on the folded side and push it over the tabletop with both hands in a circular motion. The aim is to make the surface of the dough smooth.
  • The bowl and the dough are oiled. The dough is placed in the bowl, covered and placed in a warm place for approx. 1-2 hours until the dough has doubled in size.
  • After rising, the dough is divided into equal pieces of 100g each and, as above, each individual piece of dough is rounded. Place the dough pieces on a baking tray lined with baking paper with enough space between them, as they will still rise well.
  • In a small bowl, whisk the egg used for brushing with a fork and brush the dough pieces with a pastry brush so that the entire surface is coated. Leave to rise in a warm place for about 45-60 minutes. During this time, you can put the egg shell in the fridge.
  • After this time, preheat the oven to 180 degrees top/bottom heat.
  • During this time, brush the buns with the egg again and bake for approx. 15 minutes. When the rolls sound hollow on the underside when tapped, they are ready. Now you can eat the buns as milk buns for breakfast or you can create super tasty burgers.
