Beet curry veggie burger with pretzel roll

Ingredients
Cooking piece for pretzel rolls
- 20 g flour
- 100 g milk
Main dough for pretzel rolls
- 40 g milk
- 12 g yeast
- 4 g honey
- 380 g flour
- 8 g salt
- 1 tbsp yogurt
- 25 g butter
- 1 egg
- cooking piece
Lye for pretzel rolls
- 1,5 l water
- 50 g baking soda
- 1 tsp salt
Curry Mango Dip
- 200 g creme fraiche
- 1/2 mango
- 1 shallot or onion
- 2 tsp fresh herbs chives and parsley or frozen
- 2 tsp curry powder
- 1/2 tsp yellow curry paste
- 1 tsp turmeric
- salt and pepper
- 1 clove of garlic
- 1 tsp honey
- 1 tsp lemon juice
Beet Patties
- 120 ml vegetable broth
- 60 g bulgur
- 1 small red onion
- 1 carrot grated
- 1/2 Zucchini
- 2-3 cloves of garlic
- 100 g beet
- 5 tbsp flour
- 50 g oat flakes
- 1 egg or vegan egg substitute
- salt, peper, chili
- 2-3 tbsp fresh herbs chopped
- 1 tbsp lemon juice
- 1 pack cheddar cheese
Instructions
Pretzel roll
- To make the boil, whisk the flour and milk together in a saucepan until lump-free. It is then heated on medium heat until it reaches a pudding-like consistency and then set aside to cool.
- To make the main dough, place the milk, yeast and honey in a large bowl. Stir in the yeast with a spoon until dissolved. Now add flour, salt, yogurt, butter, egg and the cooking piece. The dough is kneaded by hand or with a food processor for at least 10 minutes until it becomes velvety soft.
- After kneading, the dough is rounded, that is, to create a surface tension, the edges of the dough are folded towards the center. Then the dough is placed on the folded side and pushed with both hands across the tabletop in a circular motion. The goal is for the dough surface to become smooth.
- The bowl and the dough are both oiled, the dough goes into the bowl, is covered and placed in a warm place for about 1 to 2 hours until the dough has doubled in size.
- When the dough has doubled, it is divided into 100g portions with the help of a dough card.
- The dough pieces are rounded and placed on a baking sheet with baking paper and lightly flattened. The rolls are covered again and placed in a warm place until further processing.
- In the meantime, the lye is prepared.
- Cold water, baking soda and salt are placed in a large pot. The pot is heated on high until the lye boils.
- Since we are mixing the lye cold it will not foam either!
- Then the stove is reduced to medium heat that it continues to simmer.
- The oven is preheated to 180 degrees top/bottom heat.
- The dough pieces are now placed upside down in the lye with a ladle/spoon, for about 30 seconds per side. Use the ladle to press the dough pieces down until they are covered by the lye.
- Lift out the lye rolls with the ladle and drain well. Place on the baking sheet with the round facing up. Do the same with the other lye rolls.
- Before baking, sprinkle them with sesame seeds and black cumin. Bake for about 25 minutes until the desired brownness is reached.
Curry Mango Dip
- Put the crème fraiche in a bowl. Finely dice the mango and shallot, chop the fresh herbs and add to the crème fraiche, then add the remaining ingredients and mix well.
Beet Patties
- Bring the vegetable stock to the boil and add the bulgur, simmer briefly and leave to soak for 20 minutes.
- Dice the onion, grate the carrot and zucchini with a food processor or grater and mince the garlic with a garlic press. Sauté all this briefly in a pan and mix directly into the bulgur.
- Puree the beet and add to the bulgur together with flour, oat flakes and egg and season with salt, pepper, chili, lemon juice and fresh herbs. Important: It must be seasoned very strongly until you taste the spices.
- Heat a large skillet with oil over medium heat, or you can use a grill. Using your hands, form the patties and place them in the pan or on the grill. They are fried on both sides until the desired degree of browning.
- Finally, place the cheddar cheese on top of the patties until the cheese melts. At the same time, slice the cut through pretzel buns and use a skillet or grill to brown the insides.
Topping the burger

- Cut the pretzel rolls open and spread the curry dip on both halves of the rolls. Then put the onion rings, the lettuce leaf, the beet patty with the melted cheese, the tomato slice, a lettuce leaf and the top half of the bun on the bottom. Now you can enjoy it.Bon appétit
