Fruity carrot and apple salad

Servings 6 portions

Ingredients
  

  • 1 kg carrots
  • 4 apples
  • 1 organic lemon zest and juice
  • 100 ml orange juice or apple juice
  • 5 drops of lemon flavouring
  • 2-3 tbsp sugar
  • pepper

Instructions
 

  • Firstly, peel the carrots and cut off the end with a knife.
  • Peel, quarter and core the apples and wash the organic lemon thoroughly.
  • Grate the carrots with a fine grater, as well as the zest from the organic lemon.
  • Important: When grating the lemon, make sure that you don't rub off the white part of the lemon, as this tastes bitter.
  • Then cut the lemons in half and squeeze out the juice.
  • Grate the apples with a slightly coarser grater.
  • Place the grated carrot, lemon zest and apples in a bowl and add the orange or apple juice, lemon flavouring, sugar and pepper.
  • Now flavour the salad and add a little more to taste.
  • The carrot salad does not need to marinate and can be eaten immediately. Enjoy it and feel free to leave me a comment.
