Quick and delicious marble muffins
Ingredients
- 2 eggs
- 120 g sugar
- 1 pinch of salt
- 200 g creme fraiche
- 80 g oil
- 1 vanilla pod
- 200 g flour 630 spelt flour or 405 or 550 wheat flour
- 6 g baking powder
- 1/2 tsp baking soda
- 1 tbsp cocoa powder
- 1 tbsp sugar
- 100 g chocolate chunks
Instructions
- Preheat the oven to 180 degrees top/bottom heat and line the muffin tin with moulds.
- Start by beating the eggs, sugar and salt with a whisk until frothy.
- Add the crème fraîche, oil and the seeds from the vanilla pod and mix briefly.
- To do this, cut the vanilla pod open lengthways and scrape out the seeds with a teaspoon.
- Now add the flour, baking powder and bicarbonate of soda and stir in until everything is combined.
- Divide the dough in half and sieve the tablespoon of cocoa into one half, add 1 tbsp of sugar and the chocolate chunks and mix briefly.
- First pour the light-coloured batter into the muffin tins, filling them about 1/3 full, then pour the dark-coloured batter on top until the tins are 3/4 full.
- Bake the muffins for about 12 minutes. It is best to test them with a wooden or metal skewer. If no more batter sticks to the skewer when you prick it, the muffins are ready.
- The muffins can now be eaten as they are or coated with icing or chocolate icing and served after baking.
