200gflour630 spelt flour or 405 or 550 wheat flour
40gsugar
40gbrown sugar
1tspbaking powder
1pinch of salt
a littlelemon zest
1-2tspspeculoos spice
100gbutter
1egg
1tbsphoney
Instructions
Preheat the oven to 180 degrees top/bottom heat.
To make these delicious speculoos biscuits, place all the ingredients in a large bowl and knead the dough until everything has combined and a smooth dough has formed.
Roll out the dough on a floured work surface with a rolling pin and stamp the dough with biscuit stamps. Run the angled pallet under the dough to loosen the dough from the work surface and cut out the biscuits with a wavy circle cutter and place on a baking tray lined with baking paper.
Bake the speculaas biscuits at 180 degrees top/bottom heat for approx. 8-10 minutes.
The biscuits are done when they are golden brown at the bottom.
Leave the speculoos to cool and store in biscuit tins.
